Pasta with Eggplant and Artichoke Hearts

I started Weight Watchers® Online almost 4 months ago and have successfully lost 8 pounds. Here's to another 12 pounds to reach my ultimate 20 pound goal. Either way I am under my pre-baby weight so I am happy! 

I attribute part of the reason to trying new and different recipes that involves huge portions of vegetables. The Jersey produce is just awesome! Two thumbs up to Duffield's Farm Market! 

Here is a little concoction a came up with the other night. It's simple but tasty.
Extra-Virgin Olive Oil
1 large eggplant
1 medium onion
1 jar of marinated artichoke hearts
Minced garlic
Real bacon bits
1 pound of Faralle Pasta (if you are watching your weight stick with 1 cup 
or less of pasta)
Prego® Italian Sauce (click the link for a coupon)

      Preparation:   Boil pasta according to the boxes directions.
Heat gravy on medium (or make homemade if you have time! Feel free to share your recipe with me)
Cube eggplant
Heat olive oil (enough to coat the pan)
Saute eggplant, onion, minced garlic and artichoke hearts on medium low heat for about 4-5 minutes. 
Cover and saute on low for about 10 more minutes (this will help eggplant to become tender)
Drain pasta and pour gravy over it.
Top with eggplant mixture. 
                                                                           Sprinkle with real crumbled up bacon and parsley.
